wine-trail-3Produced in the municipal area of Capalbio and in the nearby municipalities of Manciano, Magliano in Toscana and Orbetello, this DOC is one of the most important in the Tuscan Maremma. In fact, this territory boasts an ancient winemaking tradition integrated with new and avant-garde enological technologies.

THE WINES:

The Wines of Capalbio obtained the DOC recognition only in 1999. Different types of wines are produced: White, Vermentino, Red, Rosso Riserva, Rosé, Cabernet Sauvignon, Sangiovese and Vin Santo.

FEATURES:

THE WHITE

Produced with Trebbiano grapes (not less than 50%) and other non-aromatic white grapes.

View: pale yellow with golden reflections

Smell: Fresh and delicate fruit aroma

Taste: Dry, fresh and delicate. Minimum alcohol content 10.5 °

Pairings: This wine is perfect with any meal, excellent with fish and meat dishes.

VERMENTINO

Produced with Vermentino grapes (85%) and other authorized non-aromatic white grape varieties.

View: lively golden yellow, more or less intense, with slight green reflections.

Smell: fruity, delicate.

Taste: dry. Minimum alcohol content 11 °

Pairings: Perfect with fish dishes but also with soup, risotto, white meat such as roast chicken or rabbit and delicate cheeses.

IL ROSSO

Produced with grapes for at least 50% Sangiovese and other authorized red grape varieties.

View: ruby red color

Smell: vinous and intense

Taste: dry and slightly tannic. Minimum alcohol content 11 °

Pairings: Perfect wine for any meal. Ideal with dishes with a strong taste, cold cuts and cheese, legume soups and red meats.

ROSSO RISERVA

Produced with the same grapes as the Rosso (50% Sangiovese and 50% other red berried grapes), aged two years of which at least 6 months in wooden barrels.

View: ruby red, more or less intense, with a tendency to develop coppery reflections over time.

Smell: full, vinous aroma.

Taste: dry, tending towards tannins. Minimum alcohol content 12 °.

Pairings: Ideal with structured menus, chicken, grilled meat and liver.

ROSÉ

Produced with the same grapes as the Rosso (50% Sangiovese and 50% other red berried grapes).

View: rosé, more or less intense, with a tendency to develop coppery reflections over time.

Smell: full, fruity aroma.

Taste: dry and fresh. Minimum alcohol content 11 °.

Pairings: A perfect for any pairing, excellent with delicate dishes, soft cheeses, fresh salami, fish or vegetable soups.

CABERNET SAUVIGNON

Produced with Cabernet Sauvignon grapes, not less than 85% and other authorized red berried grapes.

View: ruby red color with purple reflections.

Smell: intense aroma with spicy notes.

Taste: dry, full-bodied, slightly tannic. Minimum alcohol content 12 °

Pairings: with first courses such as Tuscan ragù, grilled meat and cold cuts.

SANGIOVESE

Produced with Sangiovese grapes for at least 85% and the rest with other authorized red grape varieties.

View: intense ruby red.

Smell: intense and vinous.

Taste: dry, full-bodied and slightly tannic. Minimum alcohol content 12 °.

Pairings: ideal with first courses such as tagliatelle with meat sauce or acquacotta (traditional Tuscan soup made with bread, vegetables and eggs). Also perfect as an accompaniment to white meat main courses.

VIN SANTO

This wine is produced with the same grapes as the white one (Trebbiano, not less than 50% and the remaining part of the authorized white grape varieties). The carefully selected grapes are dried and dried, hung and rigorously processed between December 1st of the same harvest year and March 31st of the following year.

The grapes are left to dry in well-ventilated rooms and the wine produced is then left to age for at least 2 years in the cartels (small elongated barrels) with a maximum capacity of 3hl.

View: color between golden and amber yellow.

Smell: ethereal, intense.

Taste: on the palate it is well balanced, velvety, round and persistent. Minimum alcohol content 16 °.

Pairings: A dessert wine ideal in combination with Tuscan dry pastries, aniseed biscuits, cantucci and dried fruit.
